From the hill
North Uist’s red deer are wild, genetically pure Scottish stock. They range free over open hill, heather and machair, and nothing about their lives is managed for the table. That is the flavour you’re buying: deep, clean and faintly of the hill.
Venison is one of the leanest red meats there is, and rich in protein and iron. Every deer in these hampers was taken by the Estate’s own stalkers as part of caring for the herd, the same work our stalking guests come to share.
Hill to table
Each deer is taken by the Estate's own stalkers in season, a single considered shot as part of managing the herd.
The carcass is hung chilled, which is what makes venison tender and gives it its depth of flavour.
Cut into joints, steaks and sausages, then vacuum-packed so it stays fresh and freezes well.
Packed cold in an insulated box and sent by courier, ready for the fridge when it arrives.
In the kitchen
Venison has almost no fat, so the one rule is: hot and fast, or low and slow. Anything in between dries it out.
Roast hot and serve pink, then rest it as long as it cooked. Sliced thin, it's the centrepiece of the table.
The prime cut. A very hot pan for a few minutes a side, rested, and carved into rosy medallions.
Diced for casseroles, pies and ragù. Three hours, low, with red wine and juniper.
Lean and well seasoned. Breakfast on Boxing Day, or with mash and onion gravy.
Made on the islands
The larger hampers carry two more tastes of the Uists, made a few miles from the hill the venison comes from.
Cured and smoked over peat by the island's own smokehouse. Thin slices, brown bread, lemon: Christmas Eve sorted.
Distilled here in the Uists. A stiff gin and tonic before dinner, or a measure in the venison's red wine sauce.
Delivery
For Christmas, order by Friday 11 December. Hampers go out chilled in the week of 14 December.

To the UK mainland, chilled in insulated packaging by courier. If you're on an island, in the Highlands or overseas, ask the Estate Office first.
Yes. Every cut is vacuum-packed, so it freezes well. Freeze it on the day it arrives and thaw it slowly in the fridge before cooking.
Yes. Give the recipient's address for delivery and add a message; the Estate writes it on a card that goes in the box.
Nothing is charged online. Send an order request; the Estate Office confirms availability, price and delivery date and sends you an invoice to pay.
Often, yes. Availability follows the stalking seasons, so ask the Estate Office what's in the larder.
